Foraging on Vancouver Island Proves a Religious Experience
At the Aerie Resort and Spa, few edible outings can equal the fervour of foraging for fungi. What's the draw, you ask? Well, beyond the mushrooms, it's the company you keep – particularly that of executive chef Castro Boateng and Brother Michael, a Benedictine monk. During the Great Fall Mushroom Hunt, held every Saturday from October 4 – 25, guests to the resort will be transported to a secluded spot to view and forage for mushrooms within Vancouver Island's sheltered (and scenic) forests. A bonus beyond the quest? Brother Michael will provide insight to the region, highlighting the area's offering of flora and fauna.
Fallen logs on mossy ground, soft bogs and steep hillsides – married with the Island's temperate rainforest – provide the best conditions (and breeding grounds) for succulent searches. And of course, you'll seek out some of the choicest edible wild mushrooms, including chanterelles, pine, cauliflower, hedgehog and king boletus, all while familiarizing yourself with the local habitat during this five-hour excursion.
Back at the resort, Chef Boateng will sizzle and sautГѓВ© your finds into a host of delectable seasonal dishes, ideal for showcasing the flavours of this wild treasure. So pack your walking shoes, rain gear and even some gloves (and don't forget your camera). It's a forage and feast on Vancouver Island.
